Choosing a farm
There are three genuinely different strategies, and the right one depends on what is scarce for you.

Mammorest is simultaneously the best Leather target and the best High Quality Pal Oil target, both at 5–10 and both at 100%. If you need Polymer as well as saddles, there is no reason to farm anything else.

Community references state a Ranch Pal produces roughly every 50 seconds, with each level giving a chance to produce more. That figure predates version 1.0, and the 1.0 patch adjusted the default ranch production interval. No confirmed post-1.0 interval has been published, so any Leather-per-hour number you see is guesswork.
Surfent's food cost of 3 is middling, so a full Ranch of them will eat through a Berry Plantation. Pair the Ranch with food production before you scale it up.

Saddles are the recurring cost. Every mount you actually want to ride is a fresh Leather bill, and the flying and legendary mounts are the expensive end — which is why a Ranch running in the background beats remembering to go hunting.
